CUPCAKES GALORE!

So I haven't had too much time to cook/bake/use a microwave lately (mostly because of my bday weekend extravaganza, but a lot because of my working schedule). So my girl/fellow blogger Ashley gave me a recipe book for my bday.

500 CUPCAKE RECIPES!!! THAT'S FIVE HUNDRED DIFFERENT KINDS OF CUPCAKES (and muffins).

I cannot WAIT to try the recipes out! I was looking at them last night, and I pretty much want to try ALL of them (except the beet one!).

Hopefully my schedule will free up some so I can do some cupcake adventuring AND some regular dinner meals as well....but it IS BBQ Season, so I see a LOT of grill action coming up!

Water gets an upgrade

I am not too much of a fan of plain water. I usually put some kind of flavor tablet in it so it's not so boring. However, I have tried a new thing, some of you may already drink it like this...adding a fruit/vegetable to the water.

The first time I made a "pitcher of water" was last week, and I put sliced cucumbers in it (like you get at a spa). The guys at work thought it looked tasty, so I gave them some.
Today I made a pitcher of water with strawberries in it. I like this one MUCH better. I think next time I go to the store I want to pick up some raspberries, blackberries, and mango's to slice up and try (not all at once). Just wanted to send out an idea for some tasty water so you can stay hydrated in the warm weather that's coming!

Quick Potato Snack

Wow - it's been through the end of March and beginning of April since I've posted here! I guess you can tell I haven't been able to do too much cooking/baking, huh?

Even though I haven't been able to do a lot in the kitchen (due to work schedules) I have had a chance to try out "super quick microwaveable snacks". Lately my favorite has been potatoes (because that was the only MAIN ingredient I could find in my fridge).

Quick and Easy Potatoes

Ingredients
- Baby Red Potatoes (or any baby potatoes you prefer)
- Butter*
- Shredded Cheese*
- Sour Cream*
- Bacon* (I use Oscar Mayer Microwaveable bacon and tear it into pieces)
*all are optional, and feel free to add more!

Directions
- Using a fork, poke holes into the potatoes (for ventilation purposes)
- Put potatoes in microwave for about a min
- Once hot, cut potatoes in 4's (or more if you prefer)
- Top with butter, Cheese, Sour Cream, Bacon, etc.
- Enjoy!!

This is a SUPER easy quick dish to make if you're rushed and hungry. And it's almost all leftover stuff from your fridge anyways! I ate this as a dinner about 3 times last week, as soon as I got home for long days of working 2 J-O-Bs.
